These 4-Ingredient Cheesy Potato Sticks are crispy on the outside and gooey on the inside, making for the perfect snack or appetizer. Made with simple ingredients like potatoes, mozzarella cheese, cornstarch, and vegetable oil, these cheesy sticks are fried to golden perfection and served warm with your favorite dips. A delicious, easy-to-make treat that’s sure to please everyone!

  • Total Time: 1 hour
  • Yield: 14 servings

Ingredients

Potatoes

  • 3-4 medium-sized golden or russet potatoes

Cheese & Coating

  • 8 oz mozzarella cheese, shredded
  • 1/2 cup cornstarch

For Frying

  • Vegetable oil for frying (enough to fill a large pan about 2-3 inches deep)

Instructions

  1. Prepare Potatoes: Peel the potatoes and chop them into chunks for easier boiling.
  2. Boil: Place the chopped potatoes in a pot of water and bring to a boil. Boil until the potatoes are fork-tender, about 15-20 minutes.
  3. Mash Potatoes: Drain the water and mash the potatoes thoroughly using a potato masher or fork until smooth and creamy.
  4. Mix Ingredients: Add the shredded mozzarella cheese and cornstarch to the mashed potatoes, mixing well until evenly combined.
  5. Shape & Chill: Transfer the potato mixture into a quart-sized Ziploc bag, flatten it evenly using a rolling pin, and place the bag in the freezer for 30 minutes to firm up.
  6. Cut Into Sticks: Remove the potato slab from the bag and cut it into sticks of your desired size.
  7. Heat Oil: In a large heavy-bottomed pan, heat vegetable oil to 375°F (190°C) for frying.
  8. Fry Potato Sticks: Carefully drop the potato sticks into the hot oil in batches. Fry for 2-3 minutes or until they turn golden brown and crispy.
  9. Drain: Remove the fried potato sticks with a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.
  10. Serve: Serve the cheesy potato sticks warm alongside your favorite dipping sauces.

Notes

  • Ensure the oil is at the correct temperature (375°F) before frying to achieve a crispy exterior without absorbing too much oil.
  • You can substitute mozzarella with other melting cheeses like cheddar for different flavors.
  • If you want a gluten-free version, confirm your cornstarch is certified gluten-free.
  • These sticks are best served fresh and hot for maximum crispiness.
