Potatoes
- 3-4 medium-sized golden or russet potatoes
Cheese & Coating
- 8 oz mozzarella cheese, shredded
- 1/2 cup cornstarch

Instructions
- Prepare Potatoes: Peel the potatoes and chop them into chunks for easier boiling.
- Boil: Place the chopped potatoes in a pot of water and bring to a boil. Boil until the potatoes are fork-tender, about 15-20 minutes.
- Mash Potatoes: Drain the water and mash the potatoes thoroughly using a potato masher or fork until smooth and creamy.
- Mix Ingredients: Add the shredded mozzarella cheese and cornstarch to the mashed potatoes, mixing well until evenly combined.
- Shape & Chill: Transfer the potato mixture into a quart-sized Ziploc bag, flatten it evenly using a rolling pin, and place the bag in the freezer for 30 minutes to firm up.
- Cut Into Sticks: Remove the potato slab from the bag and cut it into sticks of your desired size.
- Heat Oil: In a large heavy-bottomed pan, heat vegetable oil to 375°F (190°C) for frying.
- Fry Potato Sticks: Carefully drop the potato sticks into the hot oil in batches. Fry for 2-3 minutes or until they turn golden brown and crispy.
- Drain: Remove the fried potato sticks with a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.
- Serve: Serve the cheesy potato sticks warm alongside your favorite dipping sauces.
