- 2 large Honeycrisp apples

- 5 Tablespoons cinnamon (reserve 1 Tablespoon for coating)

Instructions
- Prepare Apples: Use an apple peeler to peel the skins off each apple. Cut each apple in half, then slice into ½ inch thick wedges for even cooking and crispiness.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, apple pie spice, and 4 tablespoons of cinnamon until well combined.
- Coat Apples – First Layer: Transfer the flour mixture into a large bowl or container with a lid. Add the apple wedges, cover, and shake vigorously to evenly coat all the apple slices with the flour mixture.
- Prepare for Dredging: Using a large slotted spoon, remove the apple wedges, allowing excess flour mixture to shake off. Place them on a plate to get ready for the egg wash, but keep the remaining flour mixture in the container as it will be reused.
- Make Egg Wash: In a separate mixing bowl, whisk together the eggs and vanilla extract until combined.
- Coat Apples – Second Layer: Dip a few apple wedges at a time into the egg mixture, then return them to the container with the remaining flour mixture. Shake the container again to create a second coating on the apples.
- Prepare Cinnamon Sugar: In a small bowl, mix together the light brown sugar and the reserved 1 tablespoon of cinnamon and set aside.
- Air Fry – First Batch: Spray the air fryer basket with olive oil nonstick spray. Place the coated apple fries in a single layer inside the basket (you may need to work in batches). Generously spray the top of the apples with olive oil spray and sprinkle half of the cinnamon sugar mixture on top. Air fry at 350°F (175°C) for 6 minutes.
- Flip and Finish Cooking: Open the basket carefully, flip each apple fry, spray again with olive oil spray, and sprinkle the remaining cinnamon sugar evenly over the apples. Continue to air fry for another 6 minutes until crispy and golden.
- Serve: Remove apple fries from the air fryer and serve warm with your choice of caramel sauce or a simple powdered sugar glaze for added sweetness.

- Do not overcrowd the air fryer basket; air needs to circulate for crispy fries.
