These Air Fryer Chicken Fajitas are a quick and easy way to enjoy a flavorful Tex-Mex classic. Tender, juicy chicken breasts are seasoned with fajita spices and cooked to perfection alongside colorful bell peppers and onions in the air fryer. Ready in just 20 minutes, this healthy and vibrant dish is perfect for a weeknight dinner served with warm tortillas and your favorite toppings.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 2 chicken breasts, boneless and skinless, cut into strips (around 1 pound / 450g)

Vegetables

  • 1 red bell pepper, sliced into ½ inch slices
  • 1 yellow bell pepper, sliced into ½ inch slices
  • 1 green bell pepper, sliced into ½ inch slices
  • 1 red onion, sliced into wedges

Seasoning & Oil

  • 3 tablespoons fajita seasoning
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat Air Fryer: Preheat your air fryer to 390°F (200°C) to ensure it reaches the perfect temperature for cooking the chicken and vegetables evenly.
  2. Prepare Chicken and Vegetables: Drizzle the vegetable oil over the chicken strips, then sprinkle with the fajita seasoning. Toss the chicken to coat it evenly with the seasoning. Add the sliced bell peppers and red onion, then season the vegetables well with additional fajita seasoning, ensuring everything is nicely coated.
  3. Air Fry: Place the seasoned chicken and vegetables in the air fryer basket in a single layer. Cook for 15 minutes, shaking or tossing the ingredients halfway through cooking to ensure even browning and cooking.
  4. Serve: Once cooked, serve the sizzling chicken fajitas with warmed tortillas and your favorite accompaniments like pico de gallo, avocado slices, or guacamole for a complete and satisfying meal.

Notes

  • Ensure the chicken strips are cut evenly to cook uniformly in the air fryer.
  • If your air fryer basket is small, cook in batches to avoid overcrowding.
  • Use store-bought fajita seasoning for convenience or make your own blend with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
  • This recipe can easily be doubled for larger families or meal prep.
  • For a lower-fat option, use a light cooking spray instead of vegetable oil.
