Ingredients

Sweet Potatoes

  • 3 medium (1kg or 2 1/2 lbs) sweet potatoes, cleaned

Seasoning Glaze

  • 1/4 cup extra virgin olive oil
  • 3 cloves fresh garlic, peeled and minced
  • 1 Tbsp fresh rosemary, roughly chopped
  • 1 tsp ground cumin
  • Salt and pepper, to season

Instructions

  1. Prepare the seasoning glaze: In a small mixing bowl, combine the olive oil, minced garlic, chopped rosemary, and ground cumin. Season with salt and pepper to taste. Whisk the mixture until well combined and set it aside while preparing the potatoes.
  2. Cut the sweet potatoes: Slice the sweet potatoes widthways into thin, fan-like cuts about 3mm to 4mm thick without cutting all the way through, allowing the potato to fan out when cooked.
  3. Apply seasoning: Place the sweet potatoes on a baking sheet and generously brush the seasoning glaze over each potato, ensuring the oil gets between the cuts. Leave a little glaze aside for brushing after cooking.
  4. Air fry the potatoes: Arrange the potatoes in a single layer in the air fryer basket. Avoid overcrowding by cooking in batches if needed. Air fry at 400ºF (200ºC) for 25 to 45 minutes, depending on the size of your potatoes, until they are crispy and golden on the outside and tender inside. Check doneness by piercing a knife or fork into the middle through one of the cuts.
