For the Brussels Sprouts
- 12 oz Brussels Sprouts, stemmed and halved
- 1 Tablespoon (16g) Olive Oil
- 1 teaspoon Kosher Salt
- 1 teaspoon Black Pepper
For the Chili Chicken
- 1 lb Boneless Skinless Chicken Breast, diced
- 1 Tablespoon (16g) Chili Oil
- 2 teaspoon Ground Ginger
- 1 teaspoon Garlic Powder
- 1 teaspoon Chili Powder
- 1/2 teaspoon Kosher Salt
- 1/4 cup (60g) Sweet Chili Sauce, plus more for serving
Instructions
- Prepare the Brussels Sprouts: Cut the stems off the Brussels sprouts and halve them. Toss the Brussels sprouts with olive oil, kosher salt, and black pepper until evenly coated.
- Start Air Frying Brussels Sprouts: Place the prepared Brussels sprouts in the air fryer basket and cook at 400ºF for 10 minutes to start achieving a crispy texture.
- Prepare the Chili Chicken: While the Brussels sprouts are cooking, coat the diced chicken breast with chili oil. Then add ground ginger, garlic powder, chili powder, and kosher salt. Stir well to evenly coat the chicken pieces with the spices and oil.
- Add Chicken to Air Fryer: After the Brussels sprouts have cooked for 10 minutes, add the spiced chicken breast pieces to the air fryer basket. Gently stir to mix the chicken with the Brussels sprouts for even cooking.
- Continue Air Frying: Air fry the chicken and Brussels sprouts mixture at 400ºF for an additional 10 to 12 minutes until the chicken reaches an internal temperature of 160ºF to 165ºF. Stir halfway through to ensure even crisping and cooking.
- Caramelize Sweet Chili Sauce: Add 1/4 cup of sweet chili sauce to the air fryer basket and toss to coat everything evenly. Air fry or broil for 1 to 2 minutes to caramelize the sauce, adding a glossy, flavorful finish to the dish.
- Serve: Serve hot with rice, toasted sesame seeds, lime wedges, and additional sweet chili sauce if desired for an extra kick of flavor.
