Instructions

- Prepare breadcrumb mixture: In another shallow dish, combine ¾ cup panko breadcrumbs with ¼ cup grated parmesan cheese, mixing them thoroughly for even coating.
- Coat zucchini slices: Dip each zucchini slice into the egg mixture, ensuring it is fully coated, then press the slice into the breadcrumb and parmesan mixture, coating evenly. Place each coated slice on a baking sheet for easy transfer.
- Preheat air fryer: Set your air fryer to 400°F (200°C) and allow it to preheat for a few minutes to ensure crispy results.
- Air fry zucchini chips (first batch): Arrange half of the coated zucchini slices in a single layer in the air fryer basket, leaving some space between each slice. Lightly spray them with cooking oil. Air fry for 5 to 7 minutes until starting to turn golden and crispy.
- Flip and finish air frying: Flip each zucchini chip carefully, spray the other side lightly with oil, and continue air frying for another 5 to 7 minutes until golden brown and crunchy.
- Repeat for second batch: Remove the cooked batch, then repeat the same process with the remaining zucchini slices.
