Instructions

  2. Prepare breadcrumb mixture: In another shallow dish, combine ¾ cup panko breadcrumbs with ¼ cup grated parmesan cheese, mixing them thoroughly for even coating.
  3. Coat zucchini slices: Dip each zucchini slice into the egg mixture, ensuring it is fully coated, then press the slice into the breadcrumb and parmesan mixture, coating evenly. Place each coated slice on a baking sheet for easy transfer.
  4. Preheat air fryer: Set your air fryer to 400°F (200°C) and allow it to preheat for a few minutes to ensure crispy results.
