  • 1½ tablespoons all purpose flour, plus additional for rolling the puff pastry
  • 1 large egg
  • 1 teaspoon pure almond extract
  • Pinch of salt

  • ¼ cup (28g) sliced almonds
  • Powdered sugar, for garnish

Instructions

  1. Preheat the oven: Set your oven to 400°F (204°C) to ensure it is hot and ready for baking the almond croissant bites.
  2. Prepare the almond filling: In a mixing bowl, use a hand mixer to blend the almond flour, light brown sugar, softened butter, all purpose flour, egg, almond extract, and a pinch of salt. Mix the ingredients until they just come together; avoid overmixing to maintain a good texture. Set this mixture aside.
  3. Roll out the puff pastry: Lightly flour a clean surface and roll out the thawed puff pastry sheet to an 11 by 11-inch square. Using a sharp knife or pizza cutter, slice the pastry into twenty-four 2×2 inch squares.
  4. Form the pastry cups: Gently press each puff pastry square into the cavities of a 24-count mini muffin pan, molding them so that the sides and bottoms are lined properly to hold the filling.
