- 4 slices of bread (preferably sourdough)
- 1 tbsp butter
- 1 tbsp dijon mustard (or honey garlic mustard)
- ¼ cup grated cheddar cheese
- 1 round brie cheese (approx. 140-160g, 5oz)
- 1 apple, thinly sliced
- 2 tbsp fresh thyme leaves, stems removed
Instructions
- Prepare the bread: Lay your slices of bread on a cutting board. Spread the butter evenly on the outer sides of all four slices, and spread the dijon mustard on the inside sides of two slices.
- Assemble the sandwich: On the two mustard-spread slices, layer the grated cheddar cheese, slices of brie cheese, thinly sliced apple, and sprinkle fresh thyme leaves evenly. Top each with the remaining two slices of bread, buttered side facing outwards.
- Heat the pan: Place a large pan over medium-high heat and let it warm up. Cooking one sandwich at a time is recommended, especially if your pan is smaller, to ensure even cooking and easier flipping.
- Cook the sandwich: Place the assembled sandwich in the pan. Cook for 3-5 minutes on the first side until it turns golden and crispy. Press gently on the sandwich with a spatula to help it cook evenly and make flipping easier. Flip carefully and cook the other side for another 3-5 minutes until golden brown and the cheese inside is melted. Add extra butter to the pan if needed to prevent sticking and enhance crispiness.
- Serve: Remove the sandwich from the pan, slice it in half, and serve immediately. For extra flavor, offer additional dijon mustard or a drizzle of balsamic glaze on the side.
Notes
- Using sourdough bread adds a tangy flavor and sturdy texture which holds the fillings well.
- Choose a crisp apple variety such as Granny Smith or Honeycrisp for the best balance of sweet and tart.
- If brie rind is undesirable, you can remove it before adding the cheese to the sandwich.
- Cook on medium-high heat to ensure the bread crisps nicely without burning.
- For a vegetarian diet, ensure the cheese used does not contain animal rennet.
