This Apple Coffee Cake is a deliciously light and crumbly cake bursting with tender apple pieces, warm cinnamon, and topped with a buttery streusel and optional sweet vanilla glaze. Perfectly moist and flavorful, it’s an ideal treat for breakfast, brunch, or a comforting afternoon snack with coffee or tea.

  • Total Time: 1 hour
  • Yield: 9 servings

Ingredients

Apple Filling:

  • 2 cups peeled and diced apples (any good baking apple like Granny Smith or Honeycrisp)
  • ¼ cup sugar
  • 1 teaspoon ground cinnamon
  • 1 Tablespoon all purpose flour

Streusel Topping:

  • 1 cup all purpose flour
  • 1 cup light brown sugar, packed
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter, cubed

Cake:

  • 1 ½ cups all purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup vegetable oil
  • ¾ cup granulated sugar
  • 2 medium eggs
  • ¾ teaspoon vanilla extract
  • ¾ cup plain Greek yogurt (or sour cream)
  • 3 Tablespoons 2% milk

Glaze (optional):

  • ½ cup powdered sugar
  • ¼ teaspoon vanilla extract
  • 1-2 Tablespoons milk (to your desired consistency)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Spray an 8×8-inch square baking dish with nonstick cooking spray, and for easier removal, line it with parchment paper.
  2. Make Apple Filling: In a bowl, combine peeled and diced apples with sugar, ground cinnamon, and all-purpose flour. Stir together until evenly coated and set aside.
  3. Prepare Streusel Topping: In another bowl, mix together flour, light brown sugar, cinnamon, and salt. Cut in cold cubed butter using a pastry cutter or fork until mixture forms coarse crumbs. Refrigerate until ready to use.
  4. Mix Dry Ingredients for Cake: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  5. Mix Wet Ingredients: In a large mixing bowl, combine vegetable oil and granulated sugar. Beat in eggs one at a time until smooth. Add vanilla extract and Greek yogurt, mixing well.
  6. Combine Batter: Add dry ingredients to wet ingredients in two additions, alternating with milk. Mix until just combined to avoid a tough cake.
  7. Assemble Cake – Layer 1: Spread half of the cake batter evenly into the prepared baking dish.
  8. Add Apple Filling and Streusel: Scatter the apple mixture evenly over the batter, then sprinkle half of the streusel topping on top of the apples.
  9. Assemble Cake – Layer 2: Gently spread the remaining batter over the apple and streusel layers.
  10. Top with Remaining Streusel: Sprinkle the remaining streusel evenly over the top of the cake.
  11. Bake: Bake for 45 to 55 minutes until a toothpick inserted in the center comes out clean. Baking time may vary, so check for doneness accordingly.
  12. Prepare Optional Glaze: In a small bowl, whisk powdered sugar with vanilla extract. Slowly add milk one tablespoon at a time until desired consistency is reached. Drizzle over cooled cake before serving.

Notes

  • Line the baking dish with parchment paper for easy cake removal.
  • You can use a food processor to cut the butter into the streusel mixture for quicker preparation.
  • Do not overmix the batter once dry and wet ingredients are combined to keep the cake tender.
  • Baking time may vary depending on your oven; always check doneness with a toothpick.
  • Optional glaze adds extra sweetness and a beautiful finishing touch to the cake.
