Glaze (optional):
- ½ cup powdered sugar
- ¼ teaspoon vanilla extract
- 1-2 Tablespoons milk (to your desired consistency)
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Spray an 8×8-inch square baking dish with nonstick cooking spray, and for easier removal, line it with parchment paper.
- Make Apple Filling: In a bowl, combine peeled and diced apples with sugar, ground cinnamon, and all-purpose flour. Stir together until evenly coated and set aside.
- Prepare Streusel Topping: In another bowl, mix together flour, light brown sugar, cinnamon, and salt. Cut in cold cubed butter using a pastry cutter or fork until mixture forms coarse crumbs. Refrigerate until ready to use.
- Mix Dry Ingredients for Cake: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- Mix Wet Ingredients: In a large mixing bowl, combine vegetable oil and granulated sugar. Beat in eggs one at a time until smooth. Add vanilla extract and Greek yogurt, mixing well.

- Add Apple Filling and Streusel: Scatter the apple mixture evenly over the batter, then sprinkle half of the streusel topping on top of the apples.
- Assemble Cake – Layer 2: Gently spread the remaining batter over the apple and streusel layers.
- Top with Remaining Streusel: Sprinkle the remaining streusel evenly over the top of the cake.
- Bake: Bake for 45 to 55 minutes until a toothpick inserted in the center comes out clean. Baking time may vary, so check for doneness accordingly.
- Prepare Optional Glaze: In a small bowl, whisk powdered sugar with vanilla extract. Slowly add milk one tablespoon at a time until desired consistency is reached. Drizzle over cooled cake before serving.
