For the Fritter Batter:

Instructions
- Prepare the Batter: In a medium mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, mix the milk, egg, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the diced apples to evenly distribute.
- Heat the Oil: Pour about 2 inches of vegetable oil into a deep skillet or heavy-bottomed pot. Heat over medium heat until the oil reaches 350°F (175°C). If you don’t have a thermometer, drop a small amount of batter in; it should sizzle immediately and turn golden brown in about 1 minute.
- Fry the Fritter Bites: Using a tablespoon or small cookie scoop, carefully drop spoonfuls of batter into the hot oil in batches. Avoid overcrowding the pan. Fry each fritter for 2-3 minutes per side, until golden brown and cooked through. Use a slotted spoon to transfer cooked fritter bites to a plate lined with paper towels to drain excess oil.
- Make the Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust with more milk (for thinner) or powdered sugar (for thicker) if needed.
- Glaze the Fritter Bites: While fritters are still warm, dip each bite into the glaze or drizzle glaze over the top. Set on a wire rack so excess glaze can drip off and let the glaze set before serving.

- Oil Temperature: If you don’t have a thermometer, watch for gentle, active sizzling and golden color within 1 minute. Adjust heat as necessary to avoid over-browning or undercooked centers.
