  • 2 cloves garlic
  • ¼ cup fresh parsley or cilantro
  • 1 lb lean ground beef
  • 1 tablespoon tomato paste or pomegranate molasses
  • 1 teaspoon allspice
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt

Instructions

  1. Prepare the herb mixture: In a small food processor, pulse the chopped onion, garlic, and parsley until finely minced. If you don’t have a processor, finely chop them by hand using a knife.
  2. Mix the filling: In a large mixing bowl, combine the minced onion mixture with the ground beef, tomato paste (or pomegranate molasses), and all the spices— allspice, cumin, coriander, garlic powder, paprika, and salt. Use your hands or a spoon to mix until everything is evenly incorporated.
  3. Fill the pita breads: Cut each pita in half or into quarters, then carefully open each pocket. Place about ¼ cup of the beef mixture inside each pita pocket, pressing it evenly to distribute the filling about 1 inch thick. If desired, add a layer of shredded cheese inside the pita with the beef for added flavor and creaminess.
  4. Cook by stovetop method: Heat a large heavy-duty skillet or grill pan over medium-high heat. Lightly brush both sides of the stuffed pita breads with olive oil. Place them in the pan and grill for 2-3 minutes per side, pressing down gently with a spatula, until the pita is golden brown and the beef is cooked through.
  5. Alternate oven or air fryer method: Preheat your oven to 400°F (200°C). Lightly brush both sides of the stuffed pita with olive oil, place them on a parchment paper-lined baking sheet, and bake for 12-15 minutes until cooked through and crispy. Alternatively, air fry the stuffed pita at 400°F for 12-15 minutes, flipping halfway through.
