Ingredients

  • ½ cup chopped fresh cilantro, packed
  • 1 large hass avocado (or two small avocados)
  • 1 large lime (or two small limes)

  • ¼ tsp salt (plus extra to taste)
  • ⅛ tsp black pepper

Instructions

  1. Sauté the corn: Heat a skillet to medium heat and add a drizzle of avocado oil. Add the frozen corn and sauté for 5-6 minutes until cooked through. Remove from heat and transfer the corn to a medium-large bowl. Chill in the fridge to cool completely.
  2. Alternative corn preparation: Alternatively, steam the corn in the microwave or let it thaw on the counter; either method works well if you prefer not to sauté.
  3. Prepare the onion and jalapeño: While the corn cools, finely mince about ½ to ¾ cup of red onion. Remove the seeds and pith from jalapeño peppers for mild heat, or include the seeds and membranes for a spicier salsa. Mince the jalapeño finely.
  4. Mix the dressing and combine: In a serving bowl, combine fresh lime juice, 1 tbsp avocado oil, ¼ tsp salt, and ⅛ tsp black pepper. Add the cooled corn, minced onion, jalapeño, and chopped cilantro and mix well.
  5. Prepare the avocado: Just before serving, slice the avocado lengthwise to remove the skin and pit. Dice the avocado and optionally drizzle with avocado oil to prevent browning. Gently fold the avocado into the salsa to combine all flavors.
  6. Adjust seasoning: Taste the salsa and add additional cilantro, lime juice, salt, or pepper as desired to enhance the flavor. Optional seasonings like ground cumin or cayenne pepper can be added for smoky or spicy notes.
