Instructions

  1. Preheat Oven: Preheat your oven to 400ºF and line a sheet pan with parchment paper to prevent sticking and ensure easy clean-up.
  2. Prepare Asparagus: Trim about 1 inch off the ends of the asparagus. Place the asparagus on one side of the sheet pan. Drizzle with 1 tablespoon of olive oil, then sprinkle with kosher salt and pepper. Toss with your hands to evenly coat the asparagus in oil and seasoning.
  3. Add Cherry Tomatoes: On the opposite side of the sheet pan, add the cherry tomatoes still on the vine. Drizzle with the remaining 1 tablespoon olive oil and sprinkle with salt and pepper. Toss gently to coat the tomatoes in oil and seasoning.
  4. Season: Sprinkle both the asparagus and cherry tomatoes evenly with the Italian seasoning for a fragrant herbal flavor.
  5. Bake: Place the sheet pan in the preheated oven and bake for 8 minutes until the asparagus is tender and the tomatoes are soft.
  6. Add Parmesan and Broil: Remove the sheet pan from the oven. Sprinkle the asparagus and tomatoes evenly with the freshly shaved parmesan cheese. Switch the oven to broil and return the pan under the broiler for 1-2 minutes, until the cheese is melted, bubbly, and slightly golden. Watch carefully to avoid burning.
  7. Finish and Garnish: Remove from the oven and immediately drizzle the balsamic glaze over the vegetables. Garnish with chopped parsley if desired. Serve warm.
