- 12 ea tater tots, cooked and crumbled
- 1 tsp butter
- 1 Tbsp jalapeno, seeded and finely diced
- 1/4 cup sweet onion, diced
- 1 clove garlic, diced
- 1/4 cup mozzarella cheese, shredded
- 2 eggs
- Salt and pepper to taste
Instructions
- Preheat Oven and Skillet: Preheat your oven to 350°F (175°C) and place a small skillet over medium-high heat to get it ready for sautéing.
- Sauté Vegetables: Melt the butter in the hot skillet, then add the diced onion and jalapeno. Cook for 3-5 minutes, stirring occasionally, until they begin to soften and become fragrant.
- Add Garlic: Stir in the diced garlic and cook for an additional minute, continuing to stir occasionally to prevent burning.
- Prepare Ramekins: Spray two small ramekin dishes with non-stick spray to prevent sticking. Divide the crumbled tater tots evenly between the two ramekins.
- Combine Ingredients in Ramekins: Spoon the sautéed onion, jalapeno, and garlic mixture over the tater tots in each ramekin. Then, sprinkle the shredded mozzarella cheese evenly on top.
- Add Eggs and Season: Crack one egg into each ramekin on top of the cheese layer. Season each egg with salt and pepper to your taste preferences.
- Bake the Eggs: Place the ramekins on the middle oven rack and bake at 350°F for 5 minutes to start setting the eggs.
- Broil to Finish: Switch the oven to broil on high. Broil the ramekins for 5-6 minutes or until the eggs are fully set and slightly browned on top. Watch closely to avoid overcooking.
- Rest and Serve: Remove the ramekins from the oven and let them rest for 5 minutes since they will be hot. Warn diners about the heat before serving to ensure safe enjoyment.
