Meatballs
- 1 pound 80/20 ground beef
 - ½ pound ground pork
 - 2 large eggs
 - ⅔ cup Italian-style breadcrumbs
 - ⅓ cup finely chopped fresh flat-leaf parsley, plus more for serving
 - ¼ cup freshly grated Parmesan cheese, plus more for serving
 - 3 garlic cloves, finely minced
 - 1 ½ teaspoons kosher salt
 - ½ teaspoon freshly cracked black pepper
 
Instructions
- Preheat Oven and Prepare Pans: Heat the oven to 400°F (200°C) and position a rack in the center. Line two sheet pans with parchment paper to prevent sticking and make cleanup easier.
 - Mix Ingredients: In a large bowl, combine the ground beef, ground pork, eggs, Italian-style breadcrumbs, chopped parsley, grated Parmesan cheese, minced garlic, kosher salt, and freshly cracked black pepper. Mix thoroughly ensuring the ingredients are well incorporated.
 - Form Meatballs: With wet hands to prevent sticking, shape the mixture into golf ball-sized meatballs, approximately 2 tablespoons of mixture each. Arrange about 25 meatballs evenly spaced on the prepared sheet pans.
 - Bake Meatballs: Place the sheet pans in the preheated oven and bake for about 20 minutes, rotating the pans halfway through the cooking time to ensure even browning. The meatballs should be golden brown and cooked through when done.
