These Baked Sweet Potato Zucchini Tots are a healthy and delicious snack or side dish. Combining the natural sweetness of mashed sweet potatoes with shredded zucchini, they offer a flavorful and nutritious bite that’s baked to a perfect golden brown. Naturally gluten-free and packed with vegetables, these tots are a wholesome alternative to traditional fried snacks, perfect for batch cooking or entertaining.

  • Total Time: 40-45 minutes
  • Yield: 32 tots

Ingredients

Vegetables

  • 2 medium zucchinis (about 250g), grated
  • 1 cup (250g) cooked mashed sweet potato

Seasonings & Flour

  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons coconut flour

Instructions

  1. Preheat Oven and Prepare Zucchini: Preheat your oven to 160°C (350°F) and line a baking tray with baking paper. Use your hands to firmly squeeze out all the moisture from the grated zucchini, ensuring the tots hold together better during baking.
  2. Mix Ingredients: In a large bowl, combine the squeezed zucchini, cooked mashed sweet potato, garlic powder, sea salt, black pepper, and coconut flour. Mix thoroughly until all ingredients are evenly incorporated into a cohesive mixture.
  3. Form Tots: Using a tablespoon or your hands, shape the mixture into small tots approximately tablespoon-sized. Place each formed tot onto the prepared baking sheet, spacing them slightly apart to allow even cooking.
  4. Bake Until Golden: Bake the tots in the preheated oven for 30-35 minutes, or until the exterior turns slightly golden brown and the tots are firm to the touch.
  5. Serve Warm: Remove from the oven and let cool slightly before serving. Enjoy warm with your favorite dipping sauce for a tasty snack or side dish.

Notes

  • Make sure to squeeze out as much water as possible from the zucchini to prevent soggy tots.
  • If coconut flour is not available, you may substitute with almond flour, but note slight texture differences.
  • These tots can be stored in the refrigerator for up to 3 days and reheated in the oven to maintain crispiness.
  • Feel free to add herbs such as parsley or thyme for extra flavor.
