These crispy and delicious Zucchini Tots are a healthy and tasty alternative to traditional potato tots. Made with grated zucchini, cheddar cheese, and a blend of seasonings, they are baked to golden perfection and perfect as a snack or side dish.

  • Total Time: 35 minutes
  • Yield: 4 servings (about 16 tots)

Ingredients

Primary Ingredients

  • 2 cups zucchini (grated, about 2 zucchinis)
  • 1 large egg
  • ½ cup shredded cheddar cheese
  • ½ cup panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon onion powder
  • Salt and pepper (to taste)

For Serving

  • Ketchup (for serving)

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and ensure even cooking.
  2. Prepare Zucchini: Place the grated zucchini into a clean kitchen towel and squeeze out all the excess liquid to avoid soggy tots. Discard the liquid, leaving about 1 cup of packed zucchini.
  3. Combine Ingredients: Transfer the dried zucchini to a medium bowl. Add the egg, shredded cheddar cheese, panko breadcrumbs, Italian seasoning, onion powder, and season with salt and pepper. Mix well until the mixture sticks together.
  4. Form Tots: Using about 1 tablespoon of the mixture, shape it into small oval shapes resembling tater tots. You should be able to make approximately 16 tots.
  5. Bake: Arrange the zucchini tots evenly on the prepared baking sheet. Bake in the preheated oven for 25 to 30 minutes, turning halfway through to ensure even browning, until they are golden and crispy.
  6. Serve: Remove from the oven and serve the tots warm with ketchup or your preferred dipping sauce.

Notes

  • Be sure to squeeze out as much moisture from the zucchini as possible to help the tots hold their shape and become crispy.
  • You can substitute panko breadcrumbs with gluten-free breadcrumbs to make this recipe gluten-free.
  • For a dairy-free option, use a vegan cheese substitute or omit the cheese altogether.
  • These tots can be reheated in the oven or air fryer to maintain crispiness.
  • Feel free to experiment with additional herbs or spices such as garlic powder or paprika for extra flavor.
