Ingredients

For the Balsamic Marinade/Dressing:

Instructions

  1. Prepare the Balsamic Marinade/Dressing: In a bowl, mix together balsamic vinegar, extra virgin olive oil, Dijon mustard, honey, minced garlic, salt, and pepper until well combined to create the marinade and dressing.
  2. Marinate the Steak: Place the flank steak in a shallow dish or zip-top bag and pour half of the prepared marinade over it. Refrigerate and allow the steak to marinate overnight (approximately 12 hours) to develop deep flavor.
  3. Grill the Steak: Remove the steak from the marinade, shaking off any excess. Preheat the grill to medium-high heat. Grill the steak for about 3-5 minutes per side or until it reaches your preferred level of doneness. Once cooked, transfer the steak to a plate and let it rest for 5 minutes to retain its juices.
  4. Grill the Tomatoes: While the steak rests, grill the cherry tomatoes on the same medium-high grill until they are lightly charred and blistered, approximately 3-5 minutes. Alternatively, blister the tomatoes in a heavy-bottom skillet on the stovetop over medium-high heat.
  5. Assemble the Caprese Steak: Thinly slice the rested flank steak against the grain. Arrange the slices on a serving platter and top with blistered tomatoes, diced fresh mozzarella, and thinly sliced basil. Drizzle the remaining half of the balsamic marinade/dressing over the top and serve immediately.
