Ingredients

Chicken Skewers

  • 2 lbs chicken thighs, cubed into 1-inch pieces (boneless, skinless; chicken breasts also work)
  • 1 Tbsp extra virgin olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ½ tsp cayenne pepper (optional for less heat)
  • ½ tsp salt
  • 2 Tbsp hot honey (or regular honey, optional for extra sweetness)

Bang Bang Sauce

  • 1 cup mayonnaise (plus more as needed)
  • ⅔ cup Thai sweet chili sauce
  • ¼ cup Sriracha (more or less to adjust heat level)
  • 2 Tbsp fresh lime juice

Instructions

  1. Marinate the Chicken: In a large bowl, combine the cubed chicken thighs with olive oil, paprika, garlic powder, black pepper, cayenne pepper, and salt. Toss until all pieces are thoroughly coated in the seasonings.
  2. Prepare the Skewers: Soak wooden skewers in water while prepping to help prevent burning. Thread the seasoned chicken chunks onto skewers, filling each about halfway to three-quarters full.
  3. Mix the Bang Bang Sauce: In a medium bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and lime juice until smooth and fully combined. This makes about 1.5 cups of sauce.
  4. Portion the Sauce: Pour half of the prepared sauce into a separate bowl and set aside for dipping and glazing after cooking. Use the remaining half to brush generously over the chicken skewers, making sure to coat all sides and between the pieces.
  5. Grill Method: Preheat your grill to medium-high heat. Place the chicken skewers on the grill and cook for 15-20 minutes, turning often so all sides caramelize and brushing periodically with more sauce. Remove from heat when the chicken reaches an internal temperature of 165°F.
  6. Air Fryer Method: Place skewers in a single layer in the basket of your air fryer. Air fry at 400°F for 10-12 minutes, flipping halfway through, until chicken is cooked through and slightly charred on the edges. Chicken is finished when it reaches 165°F.
  7. Finish and Serve: Transfer the cooked skewers to a plate and drizzle with reserved Bang Bang sauce and extra hot honey if desired. Serve immediately, using extra sauce for dipping.

  • Boneless, skinless chicken breasts may also be used in place of thighs.
  • For less heat, skip the cayenne, hot honey, and reduce Sriracha.
