Ingredients
Cheeses
- 4 ounces shredded mozzarella cheese
- 4 ounces shredded cheddar cheese (preferably white cheddar)
- 8 ounces softened cream cheese
Dairy & Condiments
- 1/2 cup full fat sour cream
- 1/2 cup bottled ranch dressing (such as Hidden Valley)
Pickles & Herbs
- 1 cup (160 grams) finely chopped kosher dill pickles, divided
- 2 tablespoons minced fresh dill, plus more for topping
- 2 tablespoons pickle brine
Other Ingredients
- 1 (14.5 ounce) can white beans
- 1/4 teaspoon garlic powder
Instructions
- Combine cheeses: Toss the shredded mozzarella and cheddar cheeses together and set aside for later use.
- Mix creamy base: In a large bowl, use a fork to mash and mix together the softened cream cheese, sour cream, garlic powder, and ranch dressing until well blended but not necessarily smooth.
- Add remaining ingredients: Stir in 3/4 cup of the chopped pickles, the drained white beans, half of the cheese blend, fresh dill, and pickle brine. Mix until all ingredients are thoroughly combined and evenly distributed.
- Assemble in baking dish: Transfer the dip mixture into a 7×10 inch baking dish. Evenly sprinkle the remaining half of the shredded cheese on top, followed by the rest of the chopped pickles.
- Bake: Place the baking dish in a preheated oven at 375°F (190°C) and bake for 21-23 minutes until the dip is bubbly and heated through.
- Broil to brown: Switch oven to broil and broil the dip for an additional 2 to 3 minutes to brown the cheese slightly. Watch carefully to prevent burning.
- Serve: Remove from oven, sprinkle with more fresh dill for garnish, and serve hot. This dip pairs perfectly with potato chips or pita chips.

- The pickle brine adds a unique tangy punch—don’t skip it.
- Broiling time may vary based on your oven; monitor closely to achieve desired browning.
