Ingredients

Cheeses

  • 4 ounces shredded mozzarella cheese
  • 4 ounces shredded cheddar cheese (preferably white cheddar)
  • 8 ounces softened cream cheese

Other Ingredients

  • 1 (14.5 ounce) can white beans
  • 1/4 teaspoon garlic powder

Instructions

  1. Combine cheeses: Toss the shredded mozzarella and cheddar cheeses together and set aside for later use.
  2. Mix creamy base: In a large bowl, use a fork to mash and mix together the softened cream cheese, sour cream, garlic powder, and ranch dressing until well blended but not necessarily smooth.
  3. Add remaining ingredients: Stir in 3/4 cup of the chopped pickles, the drained white beans, half of the cheese blend, fresh dill, and pickle brine. Mix until all ingredients are thoroughly combined and evenly distributed.
  4. Assemble in baking dish: Transfer the dip mixture into a 7×10 inch baking dish. Evenly sprinkle the remaining half of the shredded cheese on top, followed by the rest of the chopped pickles.
  5. Bake: Place the baking dish in a preheated oven at 375°F (190°C) and bake for 21-23 minutes until the dip is bubbly and heated through.
  6. Broil to brown: Switch oven to broil and broil the dip for an additional 2 to 3 minutes to brown the cheese slightly. Watch carefully to prevent burning.
  7. Serve: Remove from oven, sprinkle with more fresh dill for garnish, and serve hot. This dip pairs perfectly with potato chips or pita chips.
