This soulful Southern cabbage recipe is a hearty and flavorful dish that combines tender cabbage with aromatic seasonings and a buttery broth. Perfect as a comforting side, it embodies the rich tradition of Black folks’ soul food by using simple ingredients and classic cooking techniques to create a deeply satisfying vegetable dish.

  • Total Time: 35 minutes
  • Yield: 6 servings

Ingredients

Cabbage and Vegetables

  • 4 pound cabbage (3-4 pound, chopped)
  • 1 cup yellow onion (chopped)

Liquids and Fats

  • 1 cup chicken broth (or vegetable broth to make vegetarian)
  • ½ cup butter (unsalted or vegan butter)
  • 1 teaspoon apple cider vinegar

Seasonings

  • ½ teaspoon Old Bay seasoning (or Cajun seasoning)
  • ½ teaspoon garlic powder
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon salt
  • ½ teaspoon black pepper

Instructions

  1. Prepare the Cabbage: Cut out the cabbage’s core and coarsely chop the leaves using a food processor or knife. Remove the outer layer of cabbage leaves first and discard them for freshness.
  2. Heat Butter: Turn the stovetop on medium heat and add the butter to a cast iron frying pan or skillet. Allow the butter to melt completely to create a flavorful cooking base.
  3. Add Ingredients: Once the butter has melted, add the chopped cabbage, chopped onion, chicken broth, apple cider vinegar, Old Bay or Cajun seasoning, garlic powder, red pepper flakes, salt, and black pepper to the skillet. Mix them well to combine flavors evenly.
  4. Simmer Covered: Cover the pan with a lid and simmer the mixture for about 10 minutes, stirring occasionally to ensure even cooking and prevent sticking.
  5. Simmer Uncovered: Remove the lid and continue cooking the cabbage uncovered for about 15 minutes, stirring carefully. Be mindful not to let all the broth evaporate to keep the cabbage moist and tender.
  6. Serve and Enjoy: Once the cabbage is tender and flavorful, remove it from heat and serve this authentic Southern soul food dish immediately for best taste and texture.

Notes

  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • Use vegan butter to make the recipe dairy-free and suitable for vegans.
  • Adjust the amount of red pepper flakes to control the spice level according to your preference.
  • Cooking in a cast iron skillet enhances flavor and gives a nice texture to the cabbage.
  • Keep some broth in the pan while simmering uncovered to prevent dryness.
