- 1 quart fresh or frozen blueberries (1½ pounds / 680 g)
- 8 oz / 227 g honey
- ½ lemon, zested and juiced
- 1 Tablespoon of fresh lavender buds (preferably organic)
Instructions
- Step 1: Prepare the Lavender – Grind the lavender in a mortar and pestle to release its aromatic flavor. If processing jam for shelf-stability, sterilize canning jars and set up a water bath canner.
- Step 2: Cook the Berries – Combine blueberries, honey, lemon juice, and zest in a skillet. Mash as it cooks to desired consistency.
- Step 3: Bring the Jam to the Setting Point – Remove foam, cook until it reaches setting point (105°C/220°F).
- Step 4: Test the Setting Point – Check jam consistency using the freezer test method.
- Step 5: Process the Jam in a Water Bath – Add lavender, fill jars, process in water bath canner for 10 minutes.
