Ingredients

For the Blueberry Compote

  • 1/2 cup blueberries (fresh or frozen)
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1 tsp cornstarch (optional, for thickening)

For the Yogurt Base

  • 1 cup Greek yogurt (full-fat for creaminess)
  • 1/2 tsp vanilla extract
  • Extra honey or maple syrup, to taste (optional)

Instructions

  1. Make the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, honey or maple syrup, and lemon juice. Simmer for about 5 minutes, until the blueberries soften and release their juices. If you prefer a thicker compote, mix the cornstarch with 1 tablespoon of water and stir it in. Let the mixture simmer for another minute, then remove from heat and let cool completely.
  2. Prepare the Yogurt Mixture: In a bowl, mix the Greek yogurt and vanilla extract until smooth. Taste, and adjust sweetness with extra honey or maple syrup if desired.
  3. Fill the Molds: Spoon the yogurt mixture into silicone molds or a mini muffin tin, filling each cavity about three-quarters of the way full.
  4. Swirl in the Blueberry Compote: Add a small spoonful of the cooled blueberry compote on top of each yogurt-filled cavity. Using a toothpick, gently swirl the compote into the yogurt to create a marbled effect.
  5. Freeze: Place the molds in the freezer for at least 3 hours, or until the bites are fully set and frozen.
  6. Unmold and Serve: Once frozen, remove the yogurt bites from the molds. Store in an airtight container in the freezer. Before serving, let the bites sit at room temperature for 2-3 minutes to soften slightly.

Notes

  • If using frozen blueberries, there’s no need to thaw before making the compote.
  • Silicone molds make unmolding easier, but mini muffin tins lined with parchment paper work as well.
  • Swap blueberries for other berries like raspberries or blackberries if you like.
  • For extra creaminess, use full-fat Greek yogurt.
  • Adjust the amount of honey or maple syrup to your preferred sweetness.
