Instructions
- Cook Quinoa: Prepare the quinoa according to package instructions using your preferred method — stovetop, rice cooker, or Instant Pot — until fully cooked and fluffy. Set aside.
- Steam Broccoli: Pour ½ inch water into a pan or pot and bring to a simmer. Add broccoli florets, cover, and steam for 3-5 minutes until they turn bright green and become tender in the center. Drain and set aside.
- Preheat Oven and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Lightly spray a deep 9 x 9 inch baking dish with cooking oil to prevent sticking.
- Mix Ingredients: In a large mixing bowl, combine cooked quinoa, cooked chicken, steamed broccoli, egg, chicken stock, half of the shredded cheese, dried basil, dried oregano, salt, and pepper. Stir everything thoroughly until well mixed.
- Assemble Casserole: Transfer the mixture into the prepared baking dish, pressing it down evenly. Sprinkle the remaining cheese evenly over the top.
- Bake Covered: Cover the baking dish with a lid or aluminum foil and bake for 40 minutes, allowing flavors to meld and the casserole to heat through.
- Bake Uncovered: Remove the cover and bake uncovered for an additional 5-10 minutes to let the cheese on top melt and become golden brown.
- Serve: Remove the casserole from the oven, let it cool slightly, portion into bowls, and enjoy this hearty, cheesy broccoli quinoa casserole.
