Ingredients
Pumpkin Loaf:
- 1 cup (116g) whole wheat pastry flour
- 3/4 cup (98g) unbleached all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 3/4 tsp salt
- 1 1/2 Tbsp ground cinnamon
- 1 1/2 tsp ground ginger
- 1 1/2 tsp ground nutmeg
- 3/4 tsp ground cloves
- 3/4 cup (150g) light brown sugar
- 1/3 cup olive oil
- 2 tsp vanilla extract
- 2 large eggs
- 3/4 cup (180g) pumpkin purée
- 3/4 cup almond milk
Brown Sugar Icing:
- 3/4 cup (156g) light brown sugar
- 6 Tbsp oat milk
- 3 Tbsp plant-based butter
- 2 cups powdered sugar
Instructions
- Make the Pumpkin Loaf Preheat oven, prepare pan, combine dry ingredients, beat wet ingredients, mix together, pour into pan, bake, cool.
- Ice the Loaf Make icing, pour over cooled loaf, allow to set, slice and serve.
Notes
- Flour: all-purpose flour can be used instead of whole wheat pastry flour.
- Light Brown Sugar: Measure and level off without packing tightly.
- Oil: Any baking oil can be used.
- Eggs: Use directly from the refrigerator.
- Plant-Based Milk: Any variety can be used.
- Plant-Based Butter: Any plant-based or regular butter can be used.
