Ingredients

Filling

Coating

  • 1/2 cup dark chocolate
  • 1/2 tsp coconut oil

Instructions

  1. Soften the Dates: Remove the pits from your Medjool dates and soak them in hot water for 5 minutes to soften, making them easier to blend and giving the filling a chewier texture.
  2. Blend Filling Base: Drain the water from the dates. Place the softened dates in your food processor along with the sunflower seed butter and vanilla extract. Blend until the mixture resembles a thick, sticky caramel.
  3. Add Remaining Filling Ingredients: Add protein powder, cocoa powder, and a pinch of salt to the food processor. Blend again, stopping to scrape down the sides as needed, until all ingredients are well combined into a dough-like consistency.
  4. Form Balls: Scoop the dough and roll into balls about one tablespoon in size, ensuring they are compact and uniform.
  5. Chill for Chocolate Coating: Place the balls on a lined baking sheet and freeze for at least 30 minutes to set and chill them properly.
  6. Melt Chocolate Coating: In a small microwavable dish, combine the dark chocolate and coconut oil. Melt on high heat in 20-30 second intervals, stirring between each interval until smooth and fully melted.
  7. Dip and Set: Quickly dip each chilled ball into the melted chocolate coating, then return to the lined baking sheet. Let the coating set at room temperature or place back in the fridge to firm up before serving.
