Instructions
- Preheat and Prepare Brownies: Preheat your oven to 350°F. Line a 9×9-inch or 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal later. Prepare the brownie mix according to the package directions, taking care not to overbake for the best fudgy texture.
- Bake and Cool Brownies: Bake the brownies as per package instructions. Once baked, allow them to cool for 20 minutes at room temperature, then cover and place in the refrigerator or freezer to chill while you prepare the peanut butter layer.
- Prepare Peanut Butter Layer: In a large bowl, combine melted butter, creamy peanut butter, vanilla extract, powdered sugar, and salt. Mix thoroughly until a smooth, thick dough forms.
- Spread Peanut Butter Layer: Drop spoonfuls of the peanut butter mixture over the chilled brownies. Using the back of a spoon, gently spread the mixture into an even layer, pressing it to the edges of the pan. Cover and refrigerate this layer while you prepare the chocolate topping.
- Melt Chocolate Topping: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until the mixture is fully melted and smooth.
- Assemble and Set: Pour the melted chocolate over the peanut butter layer and spread it into an even layer. Let the topping set at room temperature until firm.
- Serve: Use the parchment paper overhang to carefully lift the brownies from the pan. Cut the brownies with a sharp knife, warming and drying the blade between cuts for clean slices. Allow the brownies to sit at room temperature for about 30 minutes before serving for the best texture and flavor.
