Instructions

  4. Whisk Egg Yolks: In a small bowl, whisk the egg yolks until smooth and slightly thickened, preparing them for tempering.
  5. Temper Egg Yolks: When the milk mixture starts to steam (just before boiling), carefully remove 1 cup of the warm liquid and slowly drizzle it into the whisked egg yolks while continuously whisking to avoid curdling. Then pour the egg yolk mixture back into the saucepan, returning it to medium heat.
