Ingredients
For the Filling
- 1 pound ground beef
- 1 onion, chopped
- 1 cup chopped dill pickles or sweet pickles
- 1 cup shredded Cheddar cheese
- 1 tablespoon prepared yellow mustard, or to taste

Instructions
- Cook the Beef and Onions: In a skillet over medium heat, add the ground beef and chopped onion. Cook and stir for about 10 minutes, breaking the beef into crumbles as it cooks. Once the meat is thoroughly browned, drain any excess fat and transfer the mixture to a large mixing bowl.
- Mix the Filling: To the bowl with cooked beef and onions, add the chopped pickles, shredded Cheddar cheese, and prepared mustard. Stir everything together until well combined and the cheese begins to melt slightly from the heat.
- Prepare the Egg Roll Wrappers: Line a baking sheet with parchment paper and place a small bowl of water nearby. Remove one egg roll wrapper from the package at a time, keeping the others covered with a damp towel to prevent them from drying out.
- Fill and Roll: Lay the wrapper on your work surface with one corner pointing toward you. Place about 1/4 cup of the cheeseburger filling near the corner closest to you. Fold the corner over the filling, then tightly roll up the wrapper, folding in the sides as you go. Moisten the final corner with water to seal and place the finished egg roll seam-side down on the prepared baking sheet. Cover filled egg rolls with a slightly damp towel while you finish the rest.
- Heat the Oil: Pour vegetable oil into a deep saucepan or deep fryer and heat until it reaches 365°F (185°C). Use a thermometer for accuracy.
- Fry the Egg Rolls: Working in batches, carefully lower 2 or 3 egg rolls at a time into the hot oil. Fry for 4–5 minutes, turning once, until the egg rolls are golden brown and crispy all over. Use tongs to transfer them to a plate lined with paper towels to drain excess oil.
- Serve: Serve the cheeseburger egg rolls warm, with a dipping sauce made by mixing mayonnaise and ketchup together.
Notes
- You can swap in ground turkey or chicken for a lighter version.
- Customize with your favorite burger toppings: chopped bacon, jalapeños, or sautéed mushrooms add an extra twist.
- Keep unused egg roll wrappers covered to prevent them from drying out.
- These reheat very well in an air fryer or hot oven for a crisp texture.
