This Cheesy Chicken and Rice recipe is a comforting, easy-to-make slow cooker meal that combines tender chicken, creamy soup, flavorful yellow rice, sweet corn, and melted cheddar cheese. Perfect for a hearty family dinner, it requires minimal prep and lets the slow cooker do the work for you, resulting in a satisfying dish with rich, cheesy flavors and a tender texture.

  • Total Time: 7 hours 10 minutes
  • Yield: 8 servings

Ingredients

Chicken and Soup

  • 1 pound boneless, skinless chicken breasts
  • 1 large onion, chopped
  • 1 (10.5 ounce) can cream of chicken soup

Rice and Add-ins

  • 1 (8 ounce) box Zatarain’s Yellow Rice Mix
  • 1 cup shredded cheddar cheese
  • 1 (15 ounce) can whole kernel corn, drained

Instructions

  1. Prepare the slow cooker base: Place the boneless, skinless chicken breasts in the bottom of the slow cooker. Sprinkle the chopped onion evenly over the chicken. Dollop the cream of chicken soup on top of the mixture to create a creamy base for the chicken as it cooks.
  2. Cook the chicken: Cover the slow cooker and allow the chicken and soup mixture to cook on low heat for 7 hours or on high heat for 3 hours, until the chicken is tender and fully cooked through.
  3. Cook the rice: About 30 minutes before serving, prepare the yellow rice according to the package instructions to ensure it is freshly cooked and fluffy.
  4. Shred the chicken: Remove the cooked chicken breasts from the slow cooker and shred them finely using two forks. Return the shredded chicken back into the slow cooker to combine with the cooking juices and onion.
  5. Combine all ingredients: Once the rice is done, stir it into the shredded chicken mixture inside the slow cooker. Add the shredded cheddar cheese and the drained whole kernel corn, mixing gently.
  6. Melt the cheese and serve: Continue cooking the combined mixture in the slow cooker just until the cheese has fully melted and the dish is heated through. Serve hot and enjoy your cheesy chicken and rice!

Notes

  • You can substitute cream of chicken soup with a homemade white sauce for a fresher option.
  • For extra flavor, add some garlic powder or paprika to the chicken before cooking.
  • Zatarain’s Yellow Rice Mix can be replaced with any yellow rice mix or plain rice with added seasoning.
  • Vegetables like peas or diced bell peppers can be added along with the corn for added nutrition and color.
  • Make sure to drain the canned corn well to avoid excess liquid in the casserole.
