This Cheesy Ground Beef and Rice Casserole is a comforting, family-favorite dish that combines savory ground beef, tender rice, mixed vegetables, and melty sharp cheddar cheese baked to perfection. It’s a simple, one-dish meal perfect for hearty weeknight dinners.

  • Total Time: 1 hour 15 minutes
  • Yield: 8 servings

Ingredients

Main Ingredients

  • 1 pound ground beef
  • 1 small sweet onion, small diced
  • 4 cloves garlic, minced
  • 2 (10.5 ounce) cans cream of celery soup
  • 1 ½ cups beef stock
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup instant rice
  • 12 ounces frozen mixed vegetables
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with cooking spray and set it aside for later.
  2. Cook Ground Beef and Onion: In a dutch oven or large skillet with deep sides over medium heat, add the ground beef and diced sweet onion. Break up the beef with a spoon while cooking and stir often, cooking until there is no pink left and the onions are softened, about 10 minutes. Drain any excess grease from the pan.
  3. Add Garlic: Stir in the minced garlic cloves and cook for 30 seconds until fragrant. Remove the pan from heat to prevent burning the garlic.
  4. Mix in Soups and Seasonings: Add the cans of cream of celery soup, beef stock, garlic powder, onion powder, Italian seasoning, paprika, kosher salt, and black pepper. Stir well to combine all the ingredients evenly.
  5. Add Rice and Vegetables: Stir in the instant rice and frozen mixed vegetables until evenly incorporated. Transfer the entire mixture to the prepared baking dish, spreading it out evenly.
  6. Top with Cheese and Bake: Sprinkle the shredded sharp cheddar cheese evenly over the top. Cover the dish with nonstick foil and bake in the preheated oven for 45 minutes, until the casserole is bubbly and the cheese is melted.
  7. Broil for Browned Cheese: Remove the foil and place the casserole under the broiler for a few minutes to lightly brown the cheese. Watch closely to avoid burning.
  8. Garnish and Serve: Optionally, top the casserole with dried or fresh parsley for a pop of color and freshness. Serve warm and enjoy your hearty, comforting meal!

Notes

  • Use instant rice for quick cooking—regular rice will require longer baking time and more liquid.
  • Feel free to substitute mixed vegetables with your preference such as peas, carrots, or corn.
  • Adjust seasoning according to your taste preferences, especially salt and pepper.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
