Instructions
- Muddle the Cherries: In a cocktail shaker, combine the pitted fresh cherries and simple syrup. Using a muddler or the back of a spoon, gently mash the cherries until they release their juices and are well combined with the syrup.
- Add Gin and Lime: Pour in the gin and freshly squeezed lime juice. Add a handful of ice to the shaker, then secure the lid. Shake vigorously for about 15 seconds so the flavors meld and chill.
- Strain the Mixture: Fill four glasses with fresh ice. Strain the cocktail mixture evenly among the glasses using a fine mesh strainer to catch the solids.
- Top with Club Soda: Gently top each glass with club soda, adding about 2 oz per drink. Give each cocktail a light stir to combine and preserve the fizz.
- Garnish and Serve: Garnish each drink with a lime slice and a whole cherry. Serve immediately and enjoy the refreshing, bubbly flavors!
