Ingredients

Vegetables

  • 1 yellow onion, halved and thinly sliced
  • 1 red bell pepper, thinly sliced

  • 2 tablespoons olive oil, divided
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Kosher salt, to taste
  • Fresh ground black pepper, to taste

Cheese

  • 1 cup shredded provolone cheese

Instructions

  1. Sauté the Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the sliced onions, red and green bell peppers along with salt and pepper to taste. Sauté the veggies until they become very tender, about 5-7 minutes, then remove them from the skillet and set aside on a plate.
  2. Cook the Chicken: Add the remaining tablespoon of olive oil to the same skillet. Place the thinly sliced chicken breasts in a single layer and sprinkle with Italian seasoning, smoked paprika, salt, and pepper. Let the chicken cook undisturbed for a few minutes so it browns nicely, then continue sautéing until fully cooked through, approximately 6-8 minutes in total.
  3. Combine Ingredients: Return the sautéed onions and bell peppers along with any accumulated juices back into the skillet with the chicken. Stir everything together to combine evenly.
  4. Melt the Cheese: Evenly sprinkle the shredded provolone cheese over the chicken and vegetable mixture. Cover the skillet with a lid and allow the cheese to melt completely, about 2-3 minutes.
