These Chocolate Chip Cookie Bars are a deliciously soft and chewy treat made with a classic cookie dough, baked in a convenient 8×8 inch pan for easy slicing and sharing. Perfectly balanced with golden brown sugar for moisture, and loaded with semi-sweet chocolate chips, they are an irresistible twist on traditional cookies that bake up moist and gooey with a slightly crisp edge.

  • Total Time: 40-45 minutes
  • Yield: 12 servings

Ingredients

Base Ingredients

  • 1 stick butter, softened (4 oz)
  • 1/2 cup golden brown sugar, firmly packed
  • 1/2 cup sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda

Chocolate

  • 1 1/2 cup semi-sweet chocolate chips, plus more for topping

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch glass baking dish with foil, allowing some overhang on the sides for easy removal after baking, and spray it liberally with non-stick cooking spray to prevent sticking.
  2. Mix Butter and Sugars: In a stand mixer bowl or a large mixing bowl using a hand mixer, beat the softened butter, golden brown sugar, and granulated sugar together until the mixture is fluffy, light, and well combined. This process usually takes about 3–5 minutes.
  3. Add Eggs and Flavorings: Add the vanilla extract, salt, and eggs one at a time, mixing each egg thoroughly into the batter and scraping down the sides of the bowl as necessary to ensure even mixing.
  4. Incorporate Dry Ingredients: Add the all-purpose flour and baking soda to the wet mixture and mix just until combined. Be careful not to overmix to keep the bars tender and soft.
  5. Add Chocolate Chips and Transfer: Fold in 1 1/2 cups of semi-sweet chocolate chips with a spatula, then transfer the cookie dough evenly into your prepared baking dish. Sprinkle additional chocolate chips on top for extra chocolatey goodness.
  6. Bake: Bake in the preheated oven for 30 to 35 minutes, or until the edges are golden brown and the center is just set. Avoid overbaking, as the bars will continue to cook and firm up as they cool.
  7. Cool and Serve: Allow the cookie bars to cool in the pan for at least 20 minutes before lifting them out using the foil overhang. Cut into 12 bars and serve.

Notes

  • Use room temperature eggs to help create a smooth batter.
  • Don’t overmix the dough once you add the flour to keep the bars tender.
  • Extra chocolate chips on top add a nice visual appeal and extra melty pockets of chocolate.
  • Cool bars completely before cutting to avoid crumbling.
  • You can substitute semi-sweet chocolate chips with milk chocolate or dark chocolate chips for a different flavor profile.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for a week.
