Ingredients
Yogurt Cluster Mixture
- 1 1/2 cups chopped strawberries
- 1 cup plain Greek yogurt
- 1 tbsp honey
- 1 tsp vanilla extract
Chocolate Coating
- 1 cup semi sweet chocolate chips
- 2 tbsp coconut oil
Instructions
- Mix the cluster ingredients: In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Stir thoroughly until evenly mixed.
- Form the clusters: Using a spoon, scoop about 2 tablespoons of the yogurt mixture and place it onto a parchment paper-lined baking sheet or large plate, forming roughly 10 clusters.
- Freeze the clusters: Place the baking sheet with the clusters into the freezer and freeze until the clusters are completely solid, about 1 to 2 hours.
- Melt the chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 15 or 30-second intervals, stirring after each, until the mixture is smooth and melted.
- Dip clusters in chocolate: Remove the frozen clusters from the freezer. Using a spoon, dip each cluster thoroughly into the melted chocolate, ensuring full coverage. Place dipped clusters back onto the parchment-lined sheet. Optionally, sprinkle with sea salt.
- Re-freeze the clusters: Return the coated clusters to the freezer for a few minutes until the chocolate hardens and the yogurt firms up again. Serve chilled and enjoy!
Notes
- Use fresh ripe strawberries for the best flavor and texture.
- To easily coat the clusters, keep them frozen until immediately before dipping in chocolate.
- For a dairy-free version, substitute Greek yogurt with a plant-based alternative.
- Add a pinch of sea salt after dipping for a pleasant sweet-salty contrast.
- Store leftover clusters in an airtight container in the freezer for up to 1 week.
