Ingredients
For the Batter:
- ¼ cup butter, melted (cooled)
- 2 large eggs
- ¾ cup water
- ¾ cup buttermilk
- 2 teaspoons pure vanilla extract

For Making the Pancakes:
- ¼ cup butter, melted
- ½ cup granulated sugar
- ½ tablespoon ground cinnamon
Instructions
- Prepare the batter: Whisk together ¼ cup melted butter (make sure it’s cooled), and the eggs until combined. Then add in the water, buttermilk, and vanilla extract, whisking to incorporate all the wet ingredients smoothly.
- Add dry ingredients: To the wet mixture, add the all-purpose flour, granulated sugar, baking powder, and salt. Whisk until just combined and the flour is fully incorporated. Allow the batter to rest for 5 minutes.
- Preheat cooking surface: Heat an electric griddle to 375ºF or warm a nonstick frying pan over medium-low heat to get ready for cooking the pancakes.
- Prepare churro coating: Melt ¼ cup of butter and place it near your cooking surface. In a separate flat-bottomed container, mix together ½ cup granulated sugar with ½ tablespoon ground cinnamon, ready for coating the pancakes as they cook.
- Cook the pancakes: Pour about a teaspoon of melted butter on the cooking surface per pancake but do not spread it. Then, scoop or pour ⅓ cup of pancake batter onto each butter pool. Cook for 5 to 6 minutes on the first side until bubbles form and edges set. Flip the pancakes and cook for an additional 2 to 3 minutes until golden brown on both sides.
- Coat pancakes in cinnamon sugar: Immediately transfer each cooked pancake into the cinnamon sugar mixture. Using a spoon, generously cover one side with the sugar and cinnamon mixture, then flip and cover the other side. Lightly shake off excess sugar before transferring the pancake to a serving plate.
- Serve and enjoy: Repeat the cooking and coating process for the remaining batter. Serve churro pancakes hot and fresh for the best taste experience, optionally with syrup or your favorite toppings.
