Ingredients

For the Batter:

Instructions

  1. Prepare the batter: Whisk together ¼ cup melted butter (make sure it’s cooled), and the eggs until combined. Then add in the water, buttermilk, and vanilla extract, whisking to incorporate all the wet ingredients smoothly.
  2. Add dry ingredients: To the wet mixture, add the all-purpose flour, granulated sugar, baking powder, and salt. Whisk until just combined and the flour is fully incorporated. Allow the batter to rest for 5 minutes.
  3. Preheat cooking surface: Heat an electric griddle to 375ºF or warm a nonstick frying pan over medium-low heat to get ready for cooking the pancakes.
  4. Prepare churro coating: Melt ¼ cup of butter and place it near your cooking surface. In a separate flat-bottomed container, mix together ½ cup granulated sugar with ½ tablespoon ground cinnamon, ready for coating the pancakes as they cook.
