Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin pan or line it with mini muffin liners to prevent sticking.
- Mix Wet and Dry Ingredients: In a mixing bowl, combine the cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and a pinch of salt. Stir until everything is evenly incorporated.
- Let the Batter Rest: Allow the batter to sit for 5 minutes. This helps the oats absorb some of the moisture and results in a better texture.
- Fill Muffin Pan: Scoop the batter evenly into the prepared mini muffin pan, filling each cup nearly to the top.
- Bake: Bake in the preheated oven for 18–20 minutes, or until the bites are set and lightly golden on top.
- Cool: Remove the bites from the oven and let them cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
- Enjoy or Store: Enjoy the bites warm, or store them in the refrigerator for up to 4 days for a fresh snack throughout the week.
