Dough
- 3 1/2 cups all-purpose flour
- 1/4 cup sugar
- 1 packet Fleischmann’s® RapidRise Yeast
- 1 teaspoon kosher salt
- 3/4 cup milk
- 1/4 cup water
- 1/4 cup butter
- 1 large egg
Coating
- 1 stick melted butter
- 1/2 cup granulated sugar
- 3 tablespoons ground cinnamon
Glaze
- 2 cups powdered sugar
- 4-5 tablespoons heavy cream
Instructions
- Prepare the dough mixture: Combine 2 cups of flour, sugar, yeast, and kosher salt in a large mixer bowl and stir until well blended. In a microwave-safe bowl, heat milk, water, and butter in 15-second increments on high until warm (120° to 130°F), ensuring butter is melted but not hot to touch. Add this warm liquid along with the egg to the flour mixture.
- Knead and mix the dough: Using a stand mixer at medium speed, mix the dough for 2 minutes, scraping down the bowl occasionally. Add 1 cup of flour and beat at high speed for 2 minutes, scraping the bowl as needed. Gradually add remaining flour just until the dough forms a ball. Continue mixing on low speed for 5 to 6 minutes to develop gluten and achieve a smooth dough consistency.
- Shape the dough balls: Transfer the dough to a lightly floured surface and roll it out to about 1/4-inch thickness. Cut the dough into 20-24 evenly sized pieces and roll each piece into a small ball.
- Coat dough balls and proof: Pour melted butter into a medium bowl. In another bowl, combine granulated sugar and ground cinnamon. Dip each dough ball into the melted butter, ensuring all sides are coated, then roll it in the cinnamon sugar mixture. Arrange the coated balls close together in a buttered 9 x 13-inch baking dish. Place the dish in a warm oven for 15 to 20 minutes to allow the dough to nearly double in size. Remove from oven and preheat to 350°F.
- Bake the bubble bites: Bake the risen dough balls in the preheated oven for 20 to 22 minutes until baked through and golden brown on top.
- Prepare and drizzle glaze: While the rolls bake, whisk powdered sugar and heavy cream in a medium bowl until smooth. Adjust thickness by adding more heavy cream by teaspoon if necessary. Drizzle the glaze over the warm cinnamon roll bubble bites and serve immediately for best flavor and texture.
