Ingredients

Hummus

  • 2 (15-ounce) cans chickpeas, drained with liquid reserved
  • ¾ cup reserved chickpea liquid, plus more if needed
  • ⅔ cup tahini
  • 3 tablespoons extra-virgin olive oil, plus more for serving
  • ⅓ cup fresh lemon juice (from 4 lemons)
  • 1 teaspoon lemon zest (from 2 lemons)
  • 2 garlic cloves, peeled
  • ½ teaspoon sea salt, plus more to taste

For Serving (optional)

  • Flat-leaf parsley
  • Paprika
  • Za’atar
  • Fresh vegetables (carrots, cucumber, celery, bell peppers)
  • Pita bread, warmed

Instructions

  1. Prepare Ingredients: Drain the canned chickpeas, reserving the liquid. Wash and peel garlic cloves. Juice lemons and zest two of them for fresh flavor.
  2. Combine Ingredients in Blender: Add chickpeas, ¾ cup of reserved chickpea liquid, tahini, 3 tablespoons olive oil, lemon juice, lemon zest, garlic cloves, and ½ teaspoon sea salt into a high-powered blender or food processor. If preferred, remove the skins from chickpeas before adding.
  3. Blend to Creamy Consistency: Start blending on low speed to combine ingredients, then gradually increase to high. Blend for about 5 minutes until the mixture is smooth and creamy. If needed, add additional chickpea liquid one tablespoon at a time to achieve desired creaminess. Adjust salt to taste.
  4. Serve and Garnish: Spread the creamy hummus into a shallow serving bowl using the back of a spoon. Drizzle with extra virgin olive oil and sprinkle with flat-leaf parsley, paprika, and za’atar for optional extra flavor. Serve with fresh vegetables and warm pita bread.

Notes

  • Removing the skins from chickpeas prior to blending yields an ultra-smooth texture but is optional.
