Ingredients
Dry Ingredients
- 2 ¼ cups (281 g) all-purpose flour
- 1 ½ cups (300 g) granulated sugar
- 3 ½ teaspoons baking powder
- 1 teaspoon salt
Wet Ingredients
- 1 ¼ cups milk
- ⅛ cup vegetable oil
- ½ cup (1 stick or 113 g) butter, softened
- 1 tablespoon vanilla extract
- 3 large eggs
Instructions
- Measure Dry Ingredients: Measure the flour into a quart size mason jar, then add sugar on top, followed by baking powder, and finally salt. Secure the lid on the jar to store until ready to use.
- Prepare Butter: Place softened butter into a stand mixer bowl. Using medium speed, beat the butter for 1 to 2 minutes until creamy. You may substitute a hand-held mixer if a stand mixer is not available.
- Combine Dry Ingredients with Butter: Add the measured dry ingredients from the jar into the mixer bowl containing the butter. Mix on a low to medium speed for about 30 seconds until combined.
- Add Wet Ingredients: Pour in the milk, vegetable oil, vanilla extract, and crack in the eggs. Increase mixer speed to medium-high and mix for one full minute, ensuring the batter is smooth and well incorporated.
- Bake the Cake: Pour the prepared batter evenly into greased and/or lined pans. For 8-inch round pans, bake in a preheated oven at 350°F (177°C) for 20 to 25 minutes. If making cupcakes, begin checking for doneness at 15 minutes. For a 9×13-inch pan, bake for 30 to 38 minutes. The cake is done when a toothpick inserted in the center comes out clean.
- Cool and Frost: Allow the cake to cool completely in the pans before removing or frosting to prevent the frosting from melting or sliding off.
Notes
- The mason jar method for measuring dry ingredients allows for quick cake prep and easy storage of the dry mix.
- Make sure the butter is softened to room temperature to ensure it incorporates smoothly with dry ingredients.
- Adjust baking times according to your oven’s calibration, checking the cake a few minutes before the minimum time.
- You can customize this yellow cake by adding chocolate chips, citrus zest, or different frostings.
- For best results, use fresh baking powder to help the cake rise properly.
- Let cakes cool completely before frosting to avoid melting the frosting.
