Ingredients

Cocktail Base

  • 1/2 cup light canned coconut milk
  • 1 lime (sliced, plus juice for the drink)
  • 4 ounces ginger beer (non-alcoholic)
  • 4 ounces sparkling seltzer or sparkling water
  • 20 mint leaves

To Serve

  • Sea salt (for rimming the glass)

Instructions

  1. Prepare the Rim: Pour sea salt into a small dish. Slice the lime, and use one slice to rub along the rim of each tall glass, coating with lime juice. Press each glass, rim-side down, into the sea salt and rotate to ensure the salt sticks. Set aside.
  2. Muddle the Mint: Divide the mint leaves between the two glasses. Using a muddler or the back of a spoon, gently press and twist the mint leaves until they become fragrant and start to release their oils.
  3. Mix the Drink: Pour equal amounts of coconut milk into each glass. Squeeze in fresh lime juice from the sliced lime, then add the ginger beer and sparkling seltzer or water. Add ice cubes, if desired.
  4. Stir and Serve: Stir each drink thoroughly to combine all the ingredients until the mocktail is creamy and effervescent. Serve immediately with extra lime slices and mint leaves, if you like.
  5. Alternative Method – Blended: Prepare the glasses as above, then add coconut milk, lime juice, ginger beer, sparkling water, mint leaves, and a handful of ice to a blender. Blend until smooth. Pour into the prepared glasses and enjoy!
