Ingredients
Beef Mixture
- 1 pound lean ground beef
- 1 (1 oz) packet taco seasoning
- ¼ cup water or beef broth
- 1 cup refried beans (optional)
Other Components
- 2 cups cooked Mexican rice or instant Mexican rice
- 4 burrito-sized flour tortillas
- 2 cups Fritos or Doritos
- 1 cup cheese dip, warmed (such as Tostitos)
- 1 cup shredded Mexican cheese blend
- ½ cup sour cream
- Salsa, optional for serving
Instructions
- Cook the beef: In a sauté pan over medium heat, cook the ground beef, breaking it apart with a spatula or spoon, until it is no longer pink and fully cooked through. Drain any excess fat if necessary.
- Season the beef: Add the taco seasoning packet and ¼ cup of water or beef broth to the cooked beef. Stir to combine and let it cook for an additional minute to allow the flavors to meld together.
- Add refried beans: Stir in the refried beans to the beef mixture. If the mixture is too thick, add a little more water until you reach your desired consistency. Remove from heat.
- Prepare the rice: Cook instant Mexican rice according to package instructions or warm any previously cooked Mexican rice you have on hand.
- Warm the tortillas: Heat the flour tortillas in the microwave for about 30 seconds until soft and pliable.
- Assemble the burritos: Lay one warmed tortilla flat on a clean surface. Add a couple tablespoons of the beef and bean mixture in the center. Top with a couple tablespoons of Mexican rice, a layer of Fritos or Doritos, a generous spoonful of warmed cheese dip, shredded Mexican cheese, and a dollop of sour cream.
- Roll the burrito: Fold in the sides of the tortilla over the filling, then roll it tightly from one end to the other to form a sealed burrito. Repeat for the remaining tortillas and fillings.
- Optional toasting: You may serve the burritos immediately as is, or place them seam side down in a warmed pan over medium heat to toast the outside until golden and crisp. Flip carefully to toast the other side as well.
