  • 4 oz. cream cheese, cubed
  • ½ cup shredded mozzarella cheese
  • ¼ cup parmesan cheese

Instructions

  1. Preheat oven: Set your oven to the broil setting to prepare for finishing the dip with a golden, bubbly cheese topping.
  2. Sauté onions and garlic: Heat a large skillet over medium heat and add olive oil. Once the oil is fragrant, sprinkle in sea salt and add the minced yellow onion. Cook for 3-4 minutes until the onions are soft, then add the minced garlic and cook for an additional minute to release their aroma.
  3. Add vegetables: Stir in the thawed and drained spinach along with the chopped canned artichokes. Cook the mixture for another 3-4 minutes to combine the flavors and heat the vegetables through.
  4. Incorporate cheeses: Mix in the cream cheese cubes and cottage cheese. Stir continuously and cook the mixture for about 5 minutes until it starts to bubble and the cheeses melt into a creamy texture.
  5. Add shredded cheese and broil: Sprinkle shredded mozzarella and parmesan cheeses evenly over the top of the skillet mixture. Place the skillet under the broiler and cook until the cheese topping is golden brown and bubbly, about 3-5 minutes. Watch carefully to prevent burning.
