- 2 lbs boneless skinless chicken breast
- 1 medium onion, chopped
- 1 cup diced carrots
- 4 oz baby bella mushrooms, chopped

- 2.5 cups chicken broth
- 1 box (6 oz) Uncle Ben’s Wild Rice with seasonings
- 2 cups heavy cream
- 1/2-1 tsp kosher salt

Instructions
- Sauté Vegetables: Add chopped onion, carrots, baby bella mushrooms, and butter to the Instant Pot. Turn on sauté mode and cook while stirring frequently, scraping the bottom to remove any stuck bits, until onions become clear, about 5 minutes.
- Add Chicken and Rice: Place chicken breasts, chicken broth, wild rice along with the seasoning packet into the Instant Pot. Stir well to distribute liquids evenly and prevent sticking.
- Pressure Cook: Set the Instant Pot to manual high pressure and cook for 8 minutes. After cooking, allow the pressure to release naturally for 5 minutes, then perform a quick release to let out any remaining pressure.
- Chop Chicken: Carefully remove the hot chicken breasts from the soup. Chop them into small bite-sized pieces and stir them back into the soup.
- Add Cream and Seasoning: Slowly pour in the heavy cream while stirring constantly. Add 1/2 teaspoon kosher salt, then season with additional salt (up to 1/2 teaspoon) to taste.
- Optional Thickening: For a thicker broth, remove one cup of liquid from the soup and mix it gradually with 1 tablespoon cornstarch until smooth. Stir this mixture back into the soup, cover with the lid, and let it set in the Instant Pot for 10 minutes. Stir well before serving.
- Serve: Enjoy the creamy chicken and rice soup warm as a comforting meal on its own or with your favorite bread.

- Use wild rice with seasoning packet included for extra flavor.
- Make sure to stir frequently during sauté to prevent burning vegetables.
- If you prefer a thinner soup, skip the cornstarch thickening step.
- Leftover soup keeps well refrigerated for up to 3 days and can be reheated gently on the stovetop or in the microwave.
