Instructions
- Brown the Chicken: Heat a skillet over medium-high heat and add the olive oil. Season the chicken thighs with salt and pepper, then sear them for 2-3 minutes on each side until browned. Remove the chicken from the skillet and set aside.
- Sauté Aromatics and Tomatoes: In the same skillet, add the minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes. Sauté for 2-3 minutes until fragrant and the tomatoes soften.
- Prepare the Sauce: Pour in the chicken stock and heavy cream, then add the grated Parmesan cheese. Sprinkle the cornstarch over the mixture and whisk immediately to ensure the cornstarch disperses evenly, preventing lumps.
- Cook the Chicken in Sauce: Return the chicken thighs to the skillet, submerging them in the sauce. Lower the heat to medium-low and cover with a lid. Simmer for 15-20 minutes, stirring occasionally to prevent burning, until the chicken is cooked through. Cooking times may vary based on the size of the chicken thighs.
- Finish and Serve: Once fully cooked, stir in the chopped fresh basil. Remove from heat and serve the chicken warm, spooning the creamy sauce over each piece. Garnish with extra Parmesan, sun-dried tomatoes, and basil for enhanced flavor.

- Use chicken breasts as a substitute if preferred, adjusting cooking time accordingly.
