Chicken

Instructions
- Season and Cook Chicken: Season the chicken breasts evenly with Italian seasoning, crushed red pepper, salt, and black pepper. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken and cook for 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté Vegetables: In the same skillet, add 1 tablespoon of butter along with the minced onion and asparagus pieces. Cook for 2-3 minutes, stirring occasionally, until the asparagus is tender but still crisp. Add the minced garlic and cook for just under one minute until fragrant, being careful not to burn the garlic.
- Prepare the Creamy Sauce: Pour in the heavy cream and lemon juice, then stir in the Parmesan cheese if using. Mix thoroughly to combine all ingredients, scraping any browned bits from the skillet for extra flavor.
- Simmer Chicken in Sauce: Return the cooked chicken breasts to the skillet, nestling them into the sauce. Add the remaining tablespoon of butter. Let everything simmer together for 3-4 minutes, allowing the sauce to thicken and the flavors to meld. Taste the sauce and adjust salt and pepper if necessary. If the sauce becomes too thick, stir in up to 1/4 cup of water, chicken stock, or broth to reach the desired consistency.

- For a lighter version, substitute heavy cream with half-and-half or a mixture of milk and cream.
- Parmesan cheese is optional but adds a rich depth of flavor and creaminess.
- Trim asparagus by snapping off the woody ends before cutting into thirds.
