Crispy and flavorful zucchini chips made with a crunchy panko and Parmesan coating, air-fried to golden perfection. A healthier alternative to traditional fried snacks, these zucchini chips are easy to prepare and perfect as a light appetizer or side dish.

  • Total Time: 21 minutes
  • Yield: 6 servings

Ingredients

Zucchini Chips Ingredients

  • 1 medium to large Zucchini
  • 1/2 cup All-purpose Flour
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 Eggs
  • 1 cup Panko Bread Crumbs
  • 1/2 cup Grated Parmesan Cheese
  • Non-stick cooking spray (for air fryer)

Instructions

  1. Slice zucchini: Slice the zucchini into 1/4 to 1/2 inch thick slices to ensure they cook evenly and maintain a crisp texture.
  2. Prepare coating mixtures: In a small bowl, mix the all-purpose flour with salt and pepper. In a separate bowl, beat the eggs thoroughly with a fork. In a third bowl, combine the panko bread crumbs with grated Parmesan cheese for a flavorful crunchy coating.
  3. Coat zucchini slices: Dip each zucchini slice first into the flour mixture, shaking off excess to avoid clumping. Then dip into the beaten eggs, removing excess liquid. Finally, press each slice into the panko and Parmesan mixture, coating both sides completely to ensure a crispy finish.
  4. Arrange in air fryer: Place the coated zucchini slices in a single layer inside the air fryer basket. It’s important not to overcrowd them for even cooking.
  5. Apply cooking spray: Lightly spray the zucchini slices with non-stick cooking spray on one side, flip them carefully, and spray the other side to help achieve a golden and crispy texture.
  6. Air fry the chips: Cook the zucchini chips at 375°F (190°C) for 6 minutes. Then flip them over and continue cooking for an additional 5 minutes or until they turn golden brown and crisp.

Notes

  • For best results, slice zucchini evenly to promote uniform cooking.
  • You can substitute Parmesan with nutritional yeast for a dairy-free option.
  • Serve immediately for maximum crispiness, as they may soften if left to sit.
  • Use non-stick spray sparingly to avoid sogginess.
  • Make sure not to overcrowd the air fryer basket to allow proper air circulation.
