Instructions

  1. Prepare the Pan and Feta – Spray a small fry pan or skillet with cooking oil, then evenly crumble the feta cheese over the bottom, making sure to cover the outside edges of the pan as well.
  2. Sauté the Feta – Set the pan over medium heat and allow the feta to sizzle for a couple of minutes, letting it melt and begin to form a crisp golden crust, but be careful not to let it burn.
  3. Cook the Egg – Gently crack the egg right into the center of the pan, on top of the bubbling feta. Sprinkle the egg with dried oregano and red pepper flakes. Let the egg cook until the yolk is at your preferred doneness—soft and runny or medium cooked.
  4. Prepare the Tortilla Base – Meanwhile, warm the tortilla on a gas stove, in the oven, or in the microwave. Smash the avocado onto the warm tortilla and finish with a squeeze of fresh lemon juice to brighten the flavor.
  5. Assemble the Dish – When the egg is finished and the cheese is crisp and golden, carefully remove the entire feta-egg with a spatula. Place it directly on top of the avocado-topped tortilla.
  6. Garnish and Serve – Finish with pickled onions and a drizzle of chili oil. Serve immediately and enjoy your Crispy Feta Fried Eggs while hot and fresh!
