Potatoes
- 4 large Russet Potatoes, rinsed
Seasoning Mix
- 3 tablespoons Olive Oil or avocado oil
- 1 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 1 teaspoon Smoked Paprika
- 1/2 teaspoon Kosher Salt, or to taste
- 1/2 teaspoon Black Pepper, or to taste
Toppings and Garnish
- 1/3 cup Finely grated or shredded Parmesan cheese, divided
- 2 tablespoons Fresh chopped parsley
Instructions
- Preheat Oven: Preheat the oven to 400°F and line 2 large baking sheets with parchment paper; set aside.
- Prepare Potatoes: Rinse and scrub the Russet potatoes thoroughly to remove any dirt. Pat dry with a paper towel to remove excess moisture.
- Slice Potatoes: Cut each potato in half lengthwise. Place the cut side down and cut each half into quarters. For large potatoes, cut each quarter in half again to make 8 wedges per potato.
- Mix Seasoning: In a small bowl, whisk together olive oil, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper.
- Coat Potato Wedges: Place potato wedges in a large mixing bowl. Pour the seasoning oil mixture over them and rub evenly to coat all wedges thoroughly.
- Arrange for Baking: Spread the coated wedges evenly on the prepared baking sheets, spacing them so they do not touch to allow crisping.
- Add Parmesan and Bake: Sprinkle 3/4 of the parmesan cheese over the wedges. Bake for 30 to 35 minutes, flipping once halfway through to ensure even browning.
- Finish and Garnish: Remove wedges from the oven. Sprinkle the remaining parmesan cheese on top, garnish with fresh chopped parsley, and season with extra salt and pepper if desired. Serve warm with your favorite dip.
