Instructions
- Preheat the Oven: Preheat your oven to 450°F (232°C). This ensures your tacos bake up deliciously crisp.
- Prepare the Beef Filling: Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and no longer pink. Stir in the taco seasoning and enchilada sauce. Mix well and let it simmer for a minute or two to meld the flavors. Remove from heat.
- Warm the Tortillas: Wrap the corn tortillas in a damp paper towel and microwave for 30–60 seconds, until they are soft and pliable. This step prevents them from cracking when folded.
- Assemble the Tacos: Brush one side of each tortilla lightly with olive oil. Place the tortillas oil-side down on a baking sheet. On one half of each tortilla, scatter 2 tablespoons of cheese, then spoon 1/4 cup of the beef mixture on top, and finish with 2 additional tablespoons of cheese. Fold each tortilla over to seal in the filling.
- Arrange and Bake: Repeat the assembly process with the remaining tortillas. Arrange the filled tacos in a single layer on your baking sheet. Bake for about 16 minutes, or until the tortillas are golden and crispy and the cheese is melted.
- Cool and Serve: Allow the tacos to cool for 3 minutes before serving. This helps the crispy tortillas firm up and makes them easier to handle.
