These Crispy Ground Beef Tacos are the ultimate weeknight dinner—easy to prepare, packed with flavor, and crowned with a perfect golden crunch. A well-seasoned beef filling is tucked into cheesy, oven-baked corn tortillas, creating a taco that’s gooey inside and irresistibly crispy outside. Customize with your favorite toppings for a crowd-pleasing meal in under 40 minutes.

  • Total Time: 31 minutes
  • Yield: 10 tacos

Ingredients

For the Beef Filling

  • 1 pound lean ground beef (90%)
  • 1 packet taco seasoning
  • 3/4 cup red enchilada sauce

For Assembly

  • 2 1/2 cups Oaxaca cheese, Mexican cheese blend, or Monterey Jack cheese (shredded)
  • 10 corn tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat the Oven: Preheat your oven to 450°F (232°C). This ensures your tacos bake up deliciously crisp.
  2. Prepare the Beef Filling: Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and no longer pink. Stir in the taco seasoning and enchilada sauce. Mix well and let it simmer for a minute or two to meld the flavors. Remove from heat.
  3. Warm the Tortillas: Wrap the corn tortillas in a damp paper towel and microwave for 30–60 seconds, until they are soft and pliable. This step prevents them from cracking when folded.
  4. Assemble the Tacos: Brush one side of each tortilla lightly with olive oil. Place the tortillas oil-side down on a baking sheet. On one half of each tortilla, scatter 2 tablespoons of cheese, then spoon 1/4 cup of the beef mixture on top, and finish with 2 additional tablespoons of cheese. Fold each tortilla over to seal in the filling.
  5. Arrange and Bake: Repeat the assembly process with the remaining tortillas. Arrange the filled tacos in a single layer on your baking sheet. Bake for about 16 minutes, or until the tortillas are golden and crispy and the cheese is melted.
  6. Cool and Serve: Allow the tacos to cool for 3 minutes before serving. This helps the crispy tortillas firm up and makes them easier to handle.

Notes

  • Warm Tortillas: Make sure your tortillas are warm and pliable before folding. If they crack or won’t stay folded, secure them with a toothpick until after baking.
  • Best Pan Choice: Bake tacos directly on a nonstick or ceramic sheet pan for the best crispy results. Avoid foil as tortillas may stick.
  • Customize: Add your favorite toppings after baking, such as shredded lettuce, diced tomatoes, avocado, or salsa.
  • Cheese Options: Oaxaca, Mexican blend, or Monterey Jack all melt beautifully in this recipe.
